Prepare and cook simple menu items that require little or no processing. Prepare raw fruit and vegetable ingredients such as salads. Prepare food by peeling, chopping, and grinding, etc. Weigh, measure, and assemble ingredients for regular and modified menu items.
Mix ingredients according to written recipes. Set up and serve hot food. Operate, maintain and clean equipment and work areas in sanitary conditions. Disassemble, clean and reassemble equipment. Follow sanitation procedures in food handling and in cleanup. Follow safety procedures to avoid personal injury or damage of equipment.
Portions foods for distribution and meal service, and covers, dates, and stores leftovers according to established procedures. Sets up and serves hot food on cafeteria and patient tray lines. Portions food for individual servings in accordance with regular and modified diets as indicated by menu and production worksheets.
Stores leftovers as required by sanitation regulations. Operates/maintains and cleans equipment and work areas in sanitary conditions. Disassembles, cleans and reassembles equipment.
Sweeps and mops floors; washes utensils, equipment, tables, food warmers and refrigerators; cleans ovens, ranges and other food service equipment.
Follows sanitation procedures in food handling and in cleanup. Follows safety procedures while performing all duties to avoid personal injury or damage of equipment.
Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience.

WORKING CONDITIONS: Kitchens are well lighted but often hot and noisy. Work requires exposure to steam, fumes and odors; soiling of hands and clothing; extreme cold temperatures of freezers and refrigerators and heat of cooking equipment and ovens. There is danger of slipping on wet or soiled floors. Cooks are subject to cuts from knives or other equipment and subject to burns from steam, scalding, hot foods or grease.
